As for the lettuce, I would just experiment with a few different types of lettuce and maybe from a different store. Im really not sure, maybe a gluten-free product exists and you could Google it or try to find something on Amazon, were trying to make it yourself, I just never have. However, the hoisin sauce really adds good flavor so you wouldn't want to just omit it without some kind of substitute.
